Cookies with candy inside


These super-delicious cookies feature a miniature candy treat nestled inside and a nice little drizzle of chocolate resting on top! The recipe below makes a pretty decent haul of cookies (around 60!) so there should be plenty to go around. The key to these cookies is being careful not to overbake them; leave the dough in the oven too long and it’s liable to crack and leak out all that delicious Snickers® goodness.

Snickers® Surprise Peanut Butter Cookies

These super-delicious cookies feature a miniature candy treat nestled inside and a nice little drizzle of chocolate resting on top! The recipe below makes a pretty decent haul of cookies (around 60!) so there should be plenty to go around. The key to these cookies is being careful not to overbake them; leave the dough in the oven too long and it’s liable to crack and leak out all that delicious Snickers goodness.

Ingredients

  • 1 cup (8 ounces) unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1½ teaspoons vanilla extract
  • 3½ cups all-purpose flour, sifted
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 bag Snickers miniatures (unwrapped)
  • 8 ounces semisweet or dark chocolate, roughly chopped
  • Confectioners’ sugar (optional)

Instructions

  1. In the bowl of a stand mixer, combine butter, peanut butter, and both sugars. Beat on medium speed until light and fluffy, about 3 to 4 minutes. Add the eggs, one at a time, beating well after each addition. Add the vanilla and beat until combined. In a separate bowl, whisk together flour, baking soda, and salt. With mixer on low speed, gradually add dry ingredients to the butter mixture. Mix until incorporated. Cover and chill dough for 2 to 3 hours.
  2. Preheat oven to 325 degrees. Remove dough from refrigerator. Break off a tablespoon of dough. Flatten dough with your hands. Place a miniature Snickers bar in the middle and form the dough into a ball around the miniature Snickers bar. Place cookies 2 inches apart on a parchment-lined sheet pan. Continue with remaining dough and Snickers. Bake for 12 minutes. Be careful not to overbake. The cookies do not brown very much. If baked too long, the tops of the cookies can crack, letting some of that delicious miniature Snickers bars escape! Let cookies rest on cookie sheets for 5 minutes then transfer them to cooling racks.
  3. Melt chocolate in a double boiler or in a heatproof bowl placed over a pot of simmering water. Stir until smooth. Remove from heat. When slightly cool, place the melted chocolate in a pastry bag fitted with a very small round tip. Drizzle the tops of the cookies with chocolate. Alternatively, the cookies can be dusted with confectioners’ sugar. Store in an airtight container.
