How long does it take to make baked brie?


From start to finish, this simple baked brie recipe takes about 35 minutes, and that includes soaking the grape leaves. The baking time is only about 10 minutes. It’s the perfect last-minute baked brie easy appetizer for entertaining!

Should I remove the rind from the brie?


Don’t touch that rind! The rind on brie cheese is completely edible, and you never need to remove it. Not all cheese rinds are edible, but the rind on brie is. It’s a soft, white mold casing (made of Penicillium camemberti or P. candidum). This is known as a "bloomy rind."
The mold is applied during production, and it helps give brie cheese its uniquely complex and delicious flavor. What does it taste like? Slightly earthy and mushroomy. The mold also helps break down the cheese's fats and proteins—that’s where the creamy texture inside comes from.


If you must, you can gently peel back the top layer for serving if you prefer an extra-creamy center. I recommend enjoying it!

How hot is baked brie when it’s done?


The ideal internal temperature of baked brie is 375 °F. I love my food thermometer!


What do I do if my baked brie is too firm or too runny?


If your brie feels too firm, it likely needs another minute or two in the oven. Press it gently in the center—it should feel soft but not collapse.


If your brie gets too soft—or even runny—it was in the oven a little too long. If this happens, it will still taste delicious. Serve it quickly while it’s warm and scoopable, or let it sit for a moment to cool slightly before serving.

How do I prevent the brie from leaking?


Keeping the rind intact is key. Wrapping the brie (cheese, honey, and all) inside the grape leaves also adds an extra layer of protection. Make sure the leaves overlap—no gaps if possible—when you arrange them on the pan. Avoid slicing into the cheese wheel before you serve it up—let your guests break into it at the table for that perfect shareable moment.

If you bake it in advance and let it cool, it won’t be warm and creamy anymore! Technically, you can rewarm it in the oven for a few minutes if you need to. However, I recommend enjoying the whole thing right away—it’s not quite the same if you bake it a second time.

Ingredients

Grape leaf whisky brine
Saffron honey
Lemon fennel
Base ingredients

Instructions

  1. Place the grape leaves in a shallow bowl with the whiskey and let them soak for about 20 minutes.
  2. Preheat the oven to 375 °F. Put the honey in a small ramekin and add your pinch of saffron. Place this ramekin in a larger bowl of hot water, making sure not to get the water into the honey, and stir the honey to bloom the saffron. Set aside.
  3. In a small bowl, toss the shaved fennel with lemon juice and salt, then set aside.
  4. Place the baguette slices on a baking sheet and brush with olive oil. Bake them until lightly golden, then rub each slice with the cut garlic and arrange them on your serving board. Discard the garlic.
  5. Remove the grape leaves from the bowl and let the whiskey drain off for a moment. Arrange the leaves overlapping on a baking sheet—you want to form a round flower shape with no gaps.
  6. Set the brie in the center of the grape leaves. With a toothpick or bamboo skewer, poke holes all over the surface of the rind. Take a teaspoon of saffron honey and spread it over the surface of the brie.
  7. Wrap the brie up tightly by bringing each leaf up and over into the middle. If necessary, you can secure it with a toothpick in the middle. Reserve the remaining honey for serving.
  8. Bake for about 10 minutes until warmed through and the cheese feels soft when pressed. Set it on your board alongside the bread.
  9. Scatter the sesame seeds over the fennel. Place this, along with the saffron honey, on your board or serving platter.
  10. For presentation, unfold the grape leaves, scrape back the top layer of the brie’s rind, and drizzle with more of the saffron honey. Scatter some picked thyme over the top.
  11. Spread a baguette slice with a generous amount of warm cheese, top with a little fennel, and finish with more honey if desired. You’re going to love it!
