This lovely spring cocktail recipe is refreshing, herbal, citrusy, and floral. I recently made it when some friends stopped by, and everyone wanted the recipe so they could make it at home—now that’s a great compliment! I shared it with them, of course, and now I’m delighted to share it with you.


When I want a drink that’s crisp and refreshing, I always reach for the gin. I love its citrusy pine notes, but my favorite varieties have hints of coriander and cardamom as well. Layer in some Cocchi Americano, Luxardo Bitter Bianco, elderflower cordial, and a touch of St. Germain, and you’ll have a floral, Negroni-like cocktail recipe just in time for the spring equinox.

How is a white Negroni different from a traditional Negroni?


A classic Negroni is a simple recipe made from gin, sweet vermouth, and Campari. A white negroni—sometimes called a Negroni bianco cocktail—replaces those intense ingredients with lighter, more herbal, and more bitter components like Cocchi Americano and bianco liqueur. 


What does a White Negroni taste like?


Instead of ruby red and bold in flavor, the white Negroni is more aromatic and floral. It’s a great spring cocktail. A well-balanced white Negroni recipe is also bittersweet, crisp, and herbal. In this version, Cocchi Americano adds a hint of bitterness with white flower notes. Luxardo Bitter Bianco makes it dry and subtly sweet. Elderflower adds lift and aroma. It’s light enough for warm afternoons and complex enough to sip slowly.

Is the ratio important in a White Negroni?


Yes indeed! Traditional white Negroni ingredients are added in equal parts, just like in a classic Negroni. That structure is what keeps the drink balanced. In this recipe, the slightly smaller portions of St. Germain and elderflower cordial prevent the cocktail from becoming too sweet.


But wait, what’s this about a spring equinox cocktail—isn't this a white Negroni?


Technically, this drink fits into the white Negroni category. The addition of elderflower cordial and a grapefruit peel garnish is atypical—they give it a seasonal twist that I’m using to celebrate the spring equinox. The equinox represents balance—equal light and darkness. And that’s exactly what this spring cocktail delivers! It’s bitter and sweet, citrusy and herbaceous, floral and dry. It’s a Negroni bianco recipe with a fresh springtime twist.

What are Cocchi Americano, Luxardo Bitter Bianco, and elderflowers?


Cocchi Americano is an Italian aperitif wine with a bittersweet profile and soft white floral notes. Luxardo Bitter Bianco is also an aperitif—infused with bitter herbs, aromatic plants, and citrus. It offers notes of wormwood, thyme, and mint. Both taste great with gin.


Then there's the elderflower: St. Germain (a French elderflower liqueur) and elderflower cordial. The cordial is alcohol-free and sweet. The liqueur adds complexity and a faint grapefruit note—which is why a twist of grapefruit peel makes a perfect garnish for this drink. Both of these ingredients are made with elderflowers, which are the fragrant blossoms of the elderberry bush. This plant blooms in late spring. The berries have medicinal properties, but the flowers are a popular ingredient in syrups, cordials, liqueurs, and teas.

What can I serve to eat with this cocktail?


This white negroni is balanced, bright, and beautifully bittersweet. It’s the kind of drink that makes you want to throw open the windows, let the light in, and toast to the new season.   1. Add all of the ingredients into a mixing glass with ice and stir until well chilled.
  2. Strain into a chilled rocks glass or a small coupe.
  3. Holding it over the glass, roll the peel between your fingers to express the oil. Run it around the rim and drop it into the drink. Cheers!
