Summer is the perfect time to share this lightly sweet and slightly spicy watermelon cocktail with your friends. This easy recipe is made with pineapple and jalapeño-infused Casamigos Blanco Tequila. This drink has all the trimmings of a truly refreshing adult beverage. It’s flavorful, and it has a little kick and just a touch of effervescence from the sparkling water or club soda. Did I mention that it’s also beautiful? The pale pink color is so summery!
Jalapeño-Infused Casamigos Blanco Tequila: How to Make Your Own Infused Tequila Recipe
If you’ve been following me for a while, you know that I sometimes make my own liquor infusions. For this cocktail, I use my pineapple and jalapeno-infused tequila. That little hint of pineapple is the perfect match for fresh watermelon.

I also make my own simple syrup. Just whip up a batch and store in the refrigerator for up to a month. Use it in a summer cocktail like this one or as a sweetener for iced tea.
Spicy Watermelon Cocktail Recipe with Pineapple and Jalapeño-Infused Tequila
Ingredients
- 2½ cups seedless watermelon chunks
- 2 ounces fresh lime juice
- 3 ounces of simple syrup
- 6 ounces Mary’s Pineapple Jalapeño-Infused Casamigos Blanco Tequila or a purchased jalapeño-infused tequila
- Ice cubes
- A splash of your favorite sparkling water or club soda
- A watermelon spear
Instructions
- Place the watermelon chunks, lime juice, simple syrup, and tequila in a blender. Blend until combined. Strain the mixture into a pitcher.
- Fill 4 cocktail glasses with ice. Divide the watermelon mixture among the glasses. Top with a splash of club soda or sparkling water and garnish with a watermelon spear.
