Easy Watermelon Feta Skewers with Fresh Mint and Balsamic Glaze
Watermelon is one of the most refreshing summer foods—I don’t think many people out there would disagree. There’s nothing like cracking open a fresh, juicy watermelon on a sunny summer afternoon. It’s sweet, hydrating, and so much fun. Kids love it, and grownups usually don’t complain either! I love to make these for backyard picnics and whenever I’m having company over for a barbecue. They’re very easy to make, and everyone loves them.

For these watermelon skewers, a small cube of feta cheese is sandwiched between two cubes of fresh watermelon, with a fresh mint or basil leaf added for extra flavor. Use decorative wood or metal skewers to keep these mini-fruit kabobs together, then arrange them on a serving platter.
Just before serving, give them a drizzle of balsamic glaze. Want to make your own? Get my Simple Balsamic Glaze recipe here. All these different flavors are incredible together. Pro tip: You can make your watermelon skewers ahead of time!
Big day ahead—perhaps a graduation party or a get-together at the pool? Make your life easier by preparing your skewers up to 6 hours before serving. Arrange them right on the serving platter and cover them loosely with plastic wrap. Keep them in the refrigerator until you’re ready to serve them. When you’re ready to serve, remove the platter from the refrigerator, uncover the skewers, and drizzle with the balsamic glaze.
