They are both so delicious and perfectly accent the flavor of any chocolate dish, especially if it is chocolate-flavored.

Here’s one more very important detail: You have to melt and then freeze the chocolate. These temperature changes (along with the addition of butter) ensure that you’ll get a beautiful chocolate curl that tastes great and doesn’t disintegrate later.

Ingredients
- 4 ounces bittersweet chocolate
- 2 teaspoons unsalted butter, cut into pieces
Instructions
- Place the chocolate and butter in a microwavable bowl. Melt the chocolate in the microwave using 20 second bursts, until the chocolate is completely melted. Careful not to overdo it—chocolate can burn quickly.
- Give the chocolate mixture a stir with a spatula to make sure it's smooth. Now pour the chocolate onto the back of a baking pan. Using an offset spatula, spread the chocolate out as thinly as possible. Place in the freezer for 3 to 4 minutes or until just firm. Using a dough scraper, scrape the surface of the chocolate using long strokes. You should see thin curls coming off as you scrape! If the chocolate gets too soft, just place it back in the freezer for a minute or two.
- Store the chocolate curls in the freezer. Use an airtight container lined with parchment paper, and add more parchment in between layers of curls so they don’t get stuck together. When you want to use them, just remove them from the freezer and decorate your pie.
